Every once in a while, I will fixate on a cupcake or macaron concept and I won't let it go until I actually make it. Today, it was Pierre Herme's Ispahan macaron. Beautiful fresh raspberries, an unctuous cream filling between two crunch yet gooey macaron shells. I know it's not raspberry season, but I just couldn't wait to make it.

Now Herme's beautiful macaron is made with fresh raspberries, lychee ganache and rose water. I personally don't much care for rose water, so I made a Mounia friendly version, using a lemon and orange blossom buttercream filling. Since it's technically no longer an Ispahan, I'll call it the Marrakech (hometown represent!).

Oh. My. God. It was so good I piped it on cupcakes and topped it with a single raspberry, you know, because that totally makes it a healthy fruit dessert! Oh, and did I mention they look as pretty as they taste?
Officially a keeper!
